Late Summer Solace Shrub & Tonic
As the Summer drifts into Autumn and the nights begin to take on a blush hue… the scent of Japanese Dog Rose in its last bloom fills the air.
Paired with Chamomile it soothes and calms, ready for that slower pace through the cooler months.
Ingredients For One Drink:
40ml Rose & Chamomile Shrub
75ml Tonic Water
Ice to Chill
Rose & Chamomile Shrub:
6 Lemons
10g Dried Chamomile Leaves
20g Dried Rose Petals
2 Drops Rose Water
200g Caster Sugar
100ml Apple Cider Vinegar with the Mother
Method:
- Begin with the Shrub. Peel the lemons, cut into segments, and place them in a large, non-reactive bowl, gently crush with your fingers.
- Add the dried petals, leaves rose water and sugar, cover with a clean tea towel, and leave for 4 hours at room temperature to infuse.
- Add the cider vinegar and leave for a further 2 hours. Strain through a muslin into a sterile bottle, you should have a clear syrup. Store in the fridge.
- When ready, add the measured shrub to a glass with a few ice cubes. Top up with tonic and serve straight away.
